When I make this, I go and pick fresh Blackberries, which are in season in Georgia around May....Ingredients:
1 pastry for a 9 inch double crust pie
4 cups fresh blackberries, washed and dried
3 tbsp all-purpose flour
1 cup white sugar (Hope ya ain't on a diet!)
1 tbsp lemon juice
1 tbsp butter
Directions:
1. Preheat oven to 450 degrees
2. Line a 9 inch pie pan with half the pastry. Save remaining pastry for top crust. Chill both while preparing Blackberries)
3. Combine Blackberries, flour, sugar, and lemon juice. Spoon mixture into pie shell and dot with butter. Cover with remaining pastry crust, pinch edges together and slash four lines in middle of crust.
4. Bake for 15 minutes. Reduce heat to 350 degrees and continue baking for 35 minutes or until browned.
This is tried and true, our favorite Blackberry pie! To keep the edges from getting too crisp, around 20 mins into cooking, I put tin foil around the edges only....
