Serves 8
4 tbsp extra virgin olive oil
1 bunch green onion, chopped
3 cloves garlic, finely chopped
1 tbsp fresh rosemary, finely chopped
4 cups chicken broth
2-32oz Can of Great Northern Beans, undrained
1/2 cup chopped ham or one ham bone
sea salt and black pepper to taste
In a large quart boiler over medium heat, heat 1 tbsp olive oil until fragrant, about 1 minute. Add Onion and garlic and cook 8 minutes.
Add Rosemary, broth, beans and ham (or Ham bone). Bring to a boil. Stir, cover and reduce heat to a simmer.
Simmer 25 minutes. Season with salt and pepper as desired.
Serve and drizzle remaining olive oil over individual servings for extra flavor.
