Tomato-Avacado Grilled Cheese Sandwiches

I looooooove Avacados!

1 ripe avacado, halved, seeded and peeled
1 tbsp lemon juice
1/2 tsp groun cumin
1/4 tsp salt
2 tbsp parsley
8 slices whole grain bread
6 ounces Monterey Jack cheese, sliced
1 large tomato, thinly sliced
2 tbsp butter, softened

1. In a small bowl, mash together avacado, lemon, cumin and salt, stir in parsley.
2. Top 4 of the bread slives with cheese, spreak with avacado mixture and top with tomatoe slices. Add remaining bread slices. Spread top of bread lightly with half the butter.
3. Heat in a large non stick skillet or griddle over medium heat. Carefully add sandwiches buttered side down. Very carefully spread the tops with remaining butter. Cook 406 minutes or until nicely toasted.
